how do you get fruit flavors into the water without adding sugar?

the details depend upon the specific flavors, but here's an overview: first, individual essences and extracts are obtained from plant sources (fruits, vegetables, spices), using a variety of ancient culinary techniques that separate the flavors we want from the sugar, color, pulp and other components that we don't. 

these techniques have been used by chefs for thousands of years and they involve various combinations of pressing, heating, cooling, filtering and dissolving. we then combine a variety of essences and extracts together according to our unique recipes. this mixture of flavors is blended with extremely pure water and the resulting "essence water" is then pasteurized for safety.
